Classic Thai Chicken Satay

  Thai Chicken satay are these skewers of  meat you will find in every nook and corner in Thailand. A very  common and very famous street food found abundantly sold be street vendors all over. The aroma of grilling satay will lure you when you walk down in any street or any lane in the country. It is most loved street food in south east Asia be it Thailand or Malaysia. Thin Strips of chicken  are marinated in a special Thai  marinade paste which is sweet and spicy ,its then skewered in wooden skewers and grilled on the BBQ or broiled in the oven. It is usually served with homemade peanut sauce for the ultimate combination. It is easy to make and great to serve in parties which will surely woe your guest. 



Ingredients
  • 1 skinless boneless chicken breast, cut into thin strips
  • Bamboo skewers (soaked in water for 1-2 hours to avoid burning)

Satay Marinade Paste
 
  1Tsp Coriander powder
  2 Stalks lemongrass chopped, white part only
  3 Shallots or 1 small onion, chopped
  2-3 Garlic cloves
  1Tsp Turmeric powder
  2Tbs Dark soya sauce
  3Tbs Fish sauce
  2 inch piece Galangal or  Ginger ,peeled and chopped
  2-3Tbs Brown sugar
  2Tsp lemon juice
  1Tsp red chili powder or 3-4 fresh red chilies
  2Tbs groundnut oil

  Directions
  • Clean and cut chicken breast into thin strips and keep aside.
  • If using wooden skewers, soak them in water for 2-3 hours as to avoid burning.
  • Blend all the marinade ingredients in a blender or food processor.
  • Add the chicken to the marinade and mix well in a bowl and cover it with plastic wrap and refrigerator for 2-3 hours. Marinate for longer hours if possible.
  • preheat a grill or grill pan to medium high. Thread chicken onto the skewers ,lightly oil the skewers and the grill pan and grill the chicken skewers until cooked thoroughly about 3-4 minutes per side. You can broil in the oven using broil or grill mode ,place the satay close to the heating grill or the uppermost rack turning it every five minutes until cooked.
  • Serve it with Spicy peanut sauce along with sliced cucumber.
  • Enjoy!!!!

Notes
      Add more sugar ,fish sauce and chili according to adjust the taste.
